Using Up Stale Bread

Make bread pudding, keeps well or freeze. 8oz bread (wholemeal's best); half a pint milk; 3oz sugar (brown best); beaten egg; 2oz melted butter/marg.; 8oz mixed dried fruit (incl mixed peel); grated orange/citrus rind (optional); heaped tsp mixed spice; tbsp of marmalade. Soak bread in milk for 30 mins. Add ingredients, mix well, no lumps. Put in buttered baking dish, sprinkle sugar on top, bake an hour at 200C. Serve hot with custard; can eat cold.
