Homemade Christmas tea and truffles gift set

This combination is a brilliant and original gift idea when you’re just not sure what to buy a friend, neighbour or even granny. Getting started

To create a special infusion, you need to make a simple, tasty chai mixture which you can bag up into little sachets. It takes a little time, but it’s not difficult, and the process is as relaxing as it is aromatic.

Masala chai recipe

Ingredients (makes one large infusion bag)

  1. 10ml loose tea leaves
  2. 2 cardamom pods gently crushed (bruised with the back of a spoon)
  3. 2 whole cloves
  4. 3 small pieces of cinnamon
  5. 1 small piece dried ginger
  6. 3 peppercorns
  7. 1 star anise

Directions

  1. Mix all the ingredients together and leave them to sit in a covered tub while you prepare the truffles.
  2. You could try variations and use the same mix to make two other flavours: masala chai with lemongrass (basic masala chai mix plus 5 pieces dried lemongrass) and masala chai with fennel (basic masala chai mix plus a large pinch of fennel seeds).

To make the teabags

  1. Cut circles of muslin cloth with a 12cm diameter.
  2. Fill the middle circles with the masala chai mix.
  3. Draw up the sides of the muslin circle and tie the bag tightly with a long piece of white cotton.
  4. Draw butterflies onto colourful cardboard, cut them out and attach them to the string ties of each teabag.
  5. Cut out another larger butterfly and write the instructions for using the teabags on the back: Allow tea to steep in 200ml boiling water for 5 minutes. Remove tea bag and top up with 100ml hot milk. Add sugar to taste. Put your feet up and enjoy.
Dark chocolate and cinnamon truffle recipe

Ingredients (makes 8-10 truffles)

  1. 100ml cream
  2. 3 cinnamon sticks
  3. 150g dark chocolate
  4. 20ml unsalted butter
  5. cocoa powder
White chocolate and cardamom truffle recipe

Ingredients (makes 8-10 truffles)

  1. 100ml cream
  2. 2 cardamom pods gently crushed (bruised with the back of a spoon)
  3. 200g white chocolate
  4. 20ml unsalted butter
  5. Icing sugar

Directions (use this method for both types of truffle)

  1. Warm the cream and whole spices together until the cream starts to steam.
  2. Remove from the heat and set aside to infuse for 15 minutes.
  3. Reheat, then remove the spices.
  4. Chop the chocolate into small pieces in a heatproof bowl. Pour over the hot cream and stir until all the chocolate has melted. Stir in the butter.
  5. Cover and refrigerate until set.
  6. Scoop out a heaped teaspoonful of the mixture and roll into a ball. Repeat until all the mixture is used.
  7. Roll in cocoa powder or icing sugar and place on a plate lined with greasepoof paper.
  8. Work quickly so that the chocolate doesn’t melt.

To gift pack your truffles
  1. Find small gift boxes and cover these with pretty wrapping or scrapbooking paper.
  2. Inside line the box with tissue paper, gently place your truffles then pull the tissue paper up to cover the sweets, scrunching the paper so it’s sealed in a pretty fashion.
  3. Box up the teabags in the same way in a separate box, decorating it in matching on contrasting paper.
  4. Cut another butterfly shape and use this as the gift tag, attaching it with a strip of pretty ribbon.
