Cinnamon buns recipe

Easy recipes for a homemade breakfast treat.

  • Combine 500g plain flour, 100g sugar, a pinch of salt and two sachets (42g) of easy yeast.
  • Melt 75g butter then whisk this into 350ml milk and two eggs, then mix the flour and the liquid together to create a ball of dough. Put this in the fridge to chill for at least 30 minutes.
  • When you’re ready to make the cinnamon buns, roll out about a third of the dough very thinly and line a greased baking tray with it to create a base for your buns.
  • Then roll the rest of it out into a long rectangle. Spread over this, a filling made by creaming together 150g sugar, 150g butter and 2 teaspoons of cinnamon.
  • Roll the rectangle lengthways to create a large sausage shape then cut this into slices as if you were cutting a Swiss roll.
  • Place these slices on their side on top of the dough in the baking tray.
  • Brush this with some beaten egg, then let it sit at kitchen temperature for no more than 15 minutes (put it back in the fridge if you’re not planning to bake them straight away).
  • Bake at 230°C (gas mark 8) for about 20 minutes.
