Easy recipe: Potato Rosti

Great with a hearty brunch or as a supper with salad. Adding cooked pancetta or lardons is a flavoursome option.

• Boil four to six large potatoes (choose a type that doesn’t crumble too easily when boiled – Maris Piper or Desiree) for about 12 to 15 minutes. Drain and cool once they are almost cooked through but not entirely soft.

• Grate the potato and mix into finely chopped onion and the optional pancetta or lardons.

• Add 200g grated Gruyere or another strong cheese, and finely chopped fresh herbs to taste.

• Shape the mixture into chunky, small patties then fry these for a few minutes on each side.

• Serve with salmon and cream cheese.
