These are great in a rich tomato sauce, added to a rice supper, or prepared with added herbs and spices for a Mediterranean flavour. You can also make these as yummy bites for a party (the recipe here makes about 15 so scale up for more) served with spicy ketchup or dips.

• Stir 500g lamb mince so that its fat is well mixed into the meat, then also stir in one finely chopped large onion and one clove of garlic finely chopped. Add herbs like mint or rosemary to taste. (Do add at least some herbs as it will bring out the flavour of the lamb.)
• Roll small handfuls of the mince mixture into balls about the size of golf balls.
• Lightly fry these for about 10 minutes or until well cooked through.
