Leftover recipes: 3 simple puddings

Make a great finish for your supper with these easy and cheap ideas


Leftovers: bread or croissants
Recipe: Bread and butter pudding
Slice your old bread and butter both sides, or slice up stale croissants or panetone. Place one layer of bread in the bottom of a buttered ovenproof dish, scatter with sultanas and add another layer of bread. Whisk together 3 eggs, 400ml milk and two tablespoons caster sugar then pour this evenly over the bread. Sprinkle with a little more sugar (and some grated nutmeg or cinnamon) and bake for 30 minutes on gas mark 4 (180°C or 350°F).


Leftovers: old apples
Recipe: Apple crumble
Peel and cut up apples, chopping out any bad bruises but ignoring minor bumps. Add the apple to a bowl with two tablespoons water and the juice of half a lemon. Add in 100g soft brown sugar and stir well. With your fingers blend together 80g plain flour with 40g softened butter and if you have some old biscuits, finely break these up and add in for extra flavour. (Especially gingernuts!) Cover the apple mixture with the crumble topping and bake for 30 minutes on gas mark 4 (180°C or 350°F).


Leftovers: brown bananas
Recipe: Fruity smoothies
Blend bananas with any other soft fruit you have plus plain or Greek yoghurt and half a glass of orange juice. If you’re feeling luxurious add a large splosh of double cream or two scoops of vanilla ice cream too, but this isn’t necessary for a yummy cooling dessert.

Savvy tip

You can freeze a banana in cling film, before it goes too brown, makes a healthy ice lolly for the children!

If you cook the apples on the hob for 15 minutes you only need to bake for ten mins or so to cook the pastry. Also if you make too much crumble it freezes really well
