No time to bake? Then fake it.


We’ve all been there, it’s Saturday morning and your schedule is completely packed with kid’s activities in the morning. You’ve somehow got to clean the house from top to toe, hang out the laundry and take the dogs for a walk all before feeding the in-laws expecting a mouth-watering lunch.

Whatever the situation, sometimes we all need a bit of help. Here are our top 4 cakes that allow you to fake it like you baked it.

Victoria sponge cake

Extra items to buy:

•    Icing sugar  

•    Buttercream

•    Strawberries

Simply disassemble the cake, put the bottom layer cake on to a plate or stand, and add a layer of sliced strawberries. Top with a layer of extra buttercream (if you want to make it richer) then add the second cake, flat-side down. Dust the top with caster sugar, and serve with a smile.


Lemon drizzle

Extra items to buy:

•    1 large lemon (juice of)

•    4 oz icing sugar

•    1 lemons to garnish

For extra lemon glaze, mix together the lemon juice, zest and icing sugar. Heat the mixture in a small pan, or in the microwave, until the sugar has dissolved and you have syrup. Brush the lemon glaze all over the cake and leave for a few minutes to set. Slice the lemons and put on top of the cake as a garnish.

Brownie

Extra items to buy:

•    Ice-cream

Simply put your brownies in the oven for 10 mins. Then scoop out the ice-cream so it sits on top. No one will know.

Banana cake
 •    Baked bananas

•    Crushed walnuts

•    Orange or lemon juice

Place unpeeled bananas on a baking tin and bake for 20 minutes. Preheat oven to 200 C / Gas 6. Carefully peel hot bananas, sprinkle with brown sugar and drizzle with orange or lemon juice. Slice in to chunky strips and lay on top of the cake. Sprinkle the crushed walnuts over as a garnish
