How to cook a seriously good steak

Here’s your guide to perfecting a medium-cooked steak:

  1. Remove steak from the fridge about 10 minutes before cooking
  2. Brush the steak with a little oil on both sides to prevent sticking
  3. After oiling, sprinkle both sides with ground sea salt to bring out the steak’s flavour and keep it juicy, then season with black pepper to add extra crunch and taste
  4. Ensure the pan/griddle/grill is very hot before you put the meat on it
  5. Cook the first side for 4 minutes without moving the meat at all, then turn it over using tongs and cook the other side for equal time, again don’t move the meat.
  6. Gently press the steak’s surface using the back of your tongs to check if it is cooked – a medium steak should feel slightly soft when pressed
  7. After cooking, rest your steak on a warm plate for a few minutes before serving to allow the juices to distribute evenly.

Serve with a fresh green salad and potato wedges for extra crunch. To make the wedges, preheat the oven to 200°C / 400°F / gas 6. Cut potatoes into wedges, place in a roasting tin and add a glug of olive oil, salt, pepper and a few smashed garlic cloves. Shake the tin until the potatoes are coated and put in the oven for 25 minutes, turning once or twice while cooking.
