Barbecue Turkey

This year, give the traditional turkey a smoky barbeque flavour. Left over meat always makes for great Boxing Day sandwiches!

Ingredients (serves 8 people)

  • 500g soft butter
  • A hand full of thyme, rosemary, sage and parsley, chopped
  • 250g bacon, finely chopped
  • Juice and rind of 2 lemons
  • 1 turkey (the one in the photo is 2.5kg)
  • 3 whole lemons, halved
  • 6 red onions, quartered
  • 4 garlic bulbs, halved through the breadth
  • 500ml chicken stock

  1. Place butter, herbs, garlic, bacon, juice and rind of lemon in a food processor. Process into a coarse mixture.

  2. Loosen the skin on the turkey's breast using the tips of your fingers. Insert half of the butter mixture under the skin and spread evenly. Place the lemon halves in the turkey's carcass and tie legs together securely using kitchen string.

  3. Place turkey in oven pan that will fit on the barbecue and spread the remaining butter mixture over. Place red onions and garlic bulb halves in the pan and add stock. Place in a barbecue with moderate coals and cover with lid. Leave to bake slowly for 3 hours.

  4. Open each hour and spoon the pan sauces over the turkey. Make a separate fire for extra coals, so that you can add warm coals to the barbecue every hour.

  5. To check if the turkey is cooked, insert a knife into the thickest part of the meat around the thighs. Leave the knife in the turkey for 15 seconds. If the knife is very hot and the juice running out is clear, the turkey is cooked.

  6. Remove from pan and place on serving plate. Spoon vegetables from the pan and serve with the turkey.
