Baked Apples with Walnuts

When you’re rushing to start the day, breakfast can easily be neglected. This often leads to unhealthy food choices throughout the day. Instead, be good to yourself and your body. Make nutrition a priority and try this baked apples recipe. As the saying goes, “an apple a day keeps the doctor away.” Add walnuts and you’ve got a good dose of antioxidants, protein and omega-3 fatty acids. You’ll feel invigorated, strong and ready to handle whatever comes your way.


Ingredients (serves 2 people)

  • 2 apples, cored
  • 1 cup unsweetened apple juice
  • 1/2 teaspoon cinnamon
  • 8-12 walnut halves

Directions

  1. Preheat the oven to 180 degrees Celsius.


  2. Core the apples. Divide walnuts and stuff into each apple and place them in a baking dish. Pour juice over the apples and place dish into oven.


  3. Periodically baste the apples with the juice. Bake for 20 to 25 minutes until apples are tender.
