Traditional Chicken Soup Recipe

This traditional chicken soup recipe is great on a cold day to help warm the cockles during Autumn and Winter. It may be old fashioned but it's easy to prepare using seasonal vegetables, and is arguably the best Autumnal soup recipe that you'll continue to make over and over. Simple, warming and tasty!

Ingredients (serves 4 people)

  • Chicken broth
  • 2 tbsp flatleaf parsley leaves
  • 200g baby carrots, peeled and sliced
  • 200g Pappardelle or Tagliatelle (noodles work well here too)

  1. Bring the broth to a simmer. Add the carrots and cook gently until tender.Cover and keep warm.

  2. Cook the noodles according to packet instructions and divide between four bowls. Ladle the soup into the bowls and add the parsley. Serve immediately.
