Three delicious healthy suppers (Chilli pot)

Ingredients (serves 5 people)

  • Mince meat
  • onion
  • garlic
  • veg (peppers, mushroom, courgette, celery etc)
  • chilli powder
  • paprika
  • cumin
  • 600ml stock
  • two tablespoons of tomato puree
  • one can of kidney beans.

Directions

  1. Use beef or pork mince and fry for about 5 minutes in its own fat rather than adding oil.


  2. Finely chop onion, garlic and veg (peppers, mushroom, courgette, celery etc) then sauté, adding a little chilli powder, paprika, cumin and cooking through.


  3. Add 600ml stock, two tablespoons of tomato puree and one can of kidney beans.


  4. Simmer with the cooked meat for an hour.
