3 simple salad dressing recipes

Three delicious and simple salad dressing recipes to add a tasty twist to your summer dishes.
Leave that shop-bought dressing in the fridge and whip up your own vinaigrette in minutes to give mealtimes a little Mediterranean flare. With just a few fresh ingredients and handy store cupboard favourites there’s no reason to ever eat a boring salad again!
Here are three lovely salad dressing recipes to try. All of these should make you enough dressing for three to four people.


Ingredients (serves 4 people)

  • Basil vinaigrette
    • 50ml lemon juice
    • 5 tbsp freshly chopped basil
    • 1 garlic clove, finely chopped or minced
    • 2 tsp of mustard (preferably a good Dijon)
    • 1 tsp sea salt
    • A pinch of black pepper
    • 2 tsp honey
    • 100ml olive oil
  • Yoghurt and tarragon vinaigrette Ingredients
    • 50ml lemon juice
    • 5 tbsp chopped tarragon
    • 1 clove of finely chopped garlic
    • 2 tsp mustard
    • 1 tsp sea salt
    • A pinch of pepper
    • 2 tsp honey
    • 100 ml plain yoghurt
    • 100 ml olive oil
  • Tomato vinaigrette Ingredients
    • 2 ripe tomatoes
    • 1 shallot
    • 1 clove of garlic
    • 2 tbsp red wine vinegar
    • 3 tbsp of extra virgin olive oil
    • Salt and pepper

  1. Basil vinaigrette
    1. Squeeze the lemon juice into a bowl then add the finely chopped garlic and basil. Set aside.
    2. Mix the honey, mustard and olive oil with the lemon juice. Then add the rest of the ingredients.

    Serving suggestion
    This fresh, sharp dressing works well with rich salads – try it with a tomato and mozzarella salad. A great salad to serve alongside our recipe for Peppers with rice.

  2. Yoghurt and tarragon vinaigrette
    1. Squeeze the lemon and place in a bowl. Finely chop the tarragon and garlic clove, then set aside.
    2. Mix the honey, mustard, yoghurt, olive oil and lemon juice together. Season with salt and pepper and then mix in the rest of the ingredients.

    Serving suggestion
    This is a lovely way to enjoy a creamy dressing without the calories.
    All you need is a good crispy lettuce and finely sliced rings of red or yellow pepper, tossed and topped with this dressing.
    Aromatic herbs like tarragon work well with fish, so put a bowl of this salad on the table to go with our Salmon with lemon and basil recipe.

  3. Tomato vinaigrette
    1. Grate the tomatoes down to the skin. Keep only the pulp and the juice, not forgetting to remove the seeds. Crush the garlic and finely chop the shallot.
    2. Mix the olive oil with the tomatoes. Season with salt and pepper, and then add the rest of the ingredients, mixing well.

    Serving suggestion
