Easy cheese and ham pies in 25 minutes

Little pies are really easy to make and can be filled with anything you fancy. Serve warm for a kids’ lunch with baked beans, or as an easy dish in a party buffet.


Ingredients (serves 6 people)

  • 400g readymade shortcrust pastry
  • sweetcorn or peas
  • finely chopped chives
  • small chunks of cooked ham
  • 6 eggs
  • 250ml milk
  • a little salt
  • 100g mature grated cheese

Directions

  1. Roll out 400g readymade shortcrust pastry.


  2. With the rim of a pint glass, cut out circles of pastry – you should have enough to fill the spaces in one or even two greased fairy cake/bun trays.


  3. Gently press each into place as the base for each pie.


  4. To each pie shell add sweetcorn or peas, finely chopped chives or small chunks of cooked ham, to taste.


  5. Whisk 6 eggs then mix with 250ml milk, a little salt and 100g mature grated cheese.


  6. Gently pour a little of the egg mixture into each pastry case and bake for 18-20 minutes in a preheated oven at gas mark 6 (or 200ºC or 400ºF).

Your cheese and ham pies in the picture have lids on! The recipe does not mention a lid So surely it's just a quiche?

Love this recipe, going to try this very soon. Like the fact that no lid means less fat and calories too...bet they are delicious cold also.

There is no way all these ingredient would fit into a pie made in fairy cake tins and there is not lid in the recipe
