Pasta platters

An easy crowd-pleaser that takes 15 minutes including prep time which can be adjusted with toppings to suit any taste.


Ingredients (serves 4 people)

  • 1 red onion
  • 2 courgettes
  • 200g mushrooms
  • yellow pepper
  • garlic
  • olive oil
  • 4 tomatoes
  • 500g vermicelli nests.

Directions

  1. Peel and cut one red onion, slice two courgettes into small batons and finely chop 200g mushrooms.


  2. Cut strips of yellow pepper and crush a clove of garlic.


  3. Lightly sauté these in olive oil for five minutes under a lid, then add four roughly chopped fresh tomatoes and simmer for 10 more minutes.


  4. Cook 500g vermicelli nests (this only takes about 3 minutes) then drain and arrange them in a large shallow dish.


  5. Pour the vegetable mixture over the nests, letting all the juice run into the platter.


  6. Serve with green salad and fresh bread.
