Effortless Pasta Napoli in 10 minutes

Such a simple dish that always goes down well as a side to a meaty main, or as a veggie supper. Serve mixed well in a huge bowl as a hearty but easy party buffet option.

Ingredients (serves 4 people)

  • 300g of pasta
  • one onion
  • a clove of garlic
  • olive oil
  • oregano
  • mushrooms or courgettes
  • 300-400g chopped tomatoes
  • black olives to top.

  1. Boil about 300g of pasta – penne or pasta shells are the easiest to eat with one fork, at parties – for about 10 minutes.

  2. Then chop one onion and a clove of garlic as finely as you can and lightly fry in a splash of olive oil with a healthy scattering of dried or fresh oregano.

  3. Add finely chopped mushrooms or courgettes if you want.

  4. Add 300-400g chopped tomatoes (a tin of chopped tomatoes gives you more flesh and less juice than a tin of plum tomatoes).

  5. Put the tomato sauce on a low heat and let it simmer until the pasta is ready, then toss together.

  6. Top with black olives.
