Foolproof Eggs Benedict Recipe

Fancy whipping up this delicious classic? We’ve got the tricks that make it easy as can be – and smoked salmon makes a delicious alternative to the bacon.


Ingredients (serves 4 people)

  • 4 eggs
  • 4 English muffins
  • 8 rashers of bacon
  • 100g unsalted butter
  • 2 large egg yolks
  • 1 teaspoon Dijon mustard
  • 1 tbsp lemon juice
  • Salt and pepper

Directions

  1. To make the Hollandaise, melt the butter in a pan. Put the egg yolks into a heatproof bowl and set this over a pan of barely simmering water (the bowl shouldn’t touch the water) before whisking in the lemon juice and the mustard. Now, start adding the melted butter in a slow steady stream, whisking all the time. Try not to add the butter too quickly as this – or everything getting too hot – is what will make your Hollandaise split. No need to be scared though – if it does split just add an ice cube and whisk furiously until the sauce becomes smooth again. When you have a nice creamy consistency, take off the heat and season, and keep warm until you’re ready to use.


  2. Grill the bacon until it’s lovely and crisp and then keep warm.


  3. Poach the eggs. Our top tips will help you to get them perfect.


  4. Split and toast your English muffins.


  5. Top each muffin with a couple of rashers of bacon and a poached egg before pouring over some Hollandaise.
