Fruitcake ice-cream lollies

Leftover Christmas cake? Instead of letting it go to waste, why not whip up these delicious ice-cream lollies?

Ingredients (serves 8 people)

  • 1 litre vanilla ice cream, softened
  • 350g fruitcake of your choice
  • 300g dark chocolate, melted
  • 100g white chocolate, melted

  1. Place ice cream in a large mixing bowl and stir with a wooden spoon until it softens. Crumble fruitcake over and mix well.

  2. Spoon mixture into a silicone ice lolly mould. If you don’t have an ice lolly mould, empty yoghurt containers work well. Stick ice cream sticks in the centre of each lolly and place in the freezer overnight.

  3. Melt the dark chocolate and allow to cool slightly. Remove the frozen ice creams from the moulds and dip in melted dark chocolate. Place on baking paper in the fridge until set.

  4. Melt the white chocolate and allow to cool slightly. Use a teaspoon to drizzle it over the lollies. Leave to set again.

  5. TIP: If you prefer, you can make an ice cream cake or terrine instead of individual lollies. Just make sure you line the tin with clingfilm for easy release. The chocolate can just be drizzled on top so you’ll probably use a bit less.
