Ingredients (serves 5 people)

  • Lamb
  • olive oil
  • herbs
  • seasoning
  • lemon juice
  • cherry tomatoes
  • baby sweetcorn
  • button mushrooms
  • shallots
  • rice.

  1. Cut lean lamb into chunks and marinate for an hour in olive oil, herbs, seasoning and lemon juice.

  2. Marinate small pieces of veg (eg cherry tomatoes, baby sweetcorn, button mushrooms, shallots) and thread on skewers with the lamb.

  3. Grill on a medium setting for 10-15 minutes, turning so the meat is cooked through.

  4. Serve with rice.
