Leftover recipes: apple crumble

Make a great finish for your supper with these easy and cheap idea for leftover apple crumble


Ingredients (serves 5 people)

  • Apples
  • half a lemon
  • 100g soft brown sugar
  • 80g plain flour
  • 40g softened butter.

Directions

  1. Peel and cut up apples, chopping out any bad bruises but ignoring minor bumps.


  2. Add the apple to a bowl with two tablespoons water and the juice of half a lemon.


  3. Add in 100g soft brown sugar and stir well.


  4. With your fingers blend together 80g plain flour with 40g softened butter and if you have some old biscuits, finely break these up and add in for extra flavour. (Especially gingernuts!)


  5. Cover the apple mixture with the crumble topping and bake for 30 minutes on gas mark 4 (180°C or 350°F).

We grew up with apple crumble and I still make it. I add a pinch of salt to the topping. It tastes better with brown sugar but you can make it with white.

When I worked in supported housing for adults with learning disabilities we used to do this every Sunday adding in whatever fruit was left from the week, apples, pears, even the occasional strawberries went in. They loved it, simple to make and super yummy!!

It's lovely and filling, using half wholemeal and half white flour as well, yummy!

Definitley a winter warmer, although I sprikle a little cinnamon on the apples, and add a little into the crumble mix.
