Leftover recipes: 3 simple puddings (bread and butter pudding)

Make a great finish for your supper with these easy and cheap idea for leftover bread and butter pudding

Ingredients (serves 5 people)

  • Bread
  • butter
  • sultanas
  • 3 eggs
  • 400ml milk
  • 2 tbsp caster sugar

  1. Slice your old bread and butter both sides, or slice up stale croissants or panetone.

  2. Place one layer of bread in the bottom of a buttered ovenproof dish, scatter with sultanas and add another layer of bread.

  3. Whisk together 3 eggs, 400ml milk and two tablespoons caster sugar then pour this evenly over the bread.

  4. Sprinkle with a little more sugar (and some grated nutmeg or cinnamon) and bake for 30 minutes on gas mark 4 (180°C or 350°F).

I once made a version of this recipie with almost stale croissants, satsumas past their best and an egg custard as described. This was honestly one of the most delicious puddings I ever tasted! (And I have eaten a lot of puddings!)
