Lemon drizzle cake recipe

This gorgeous treat is bursting with summery zest and is super easy to make. A decadent birthday cake idea – buttery and as good as anything you'll find in your local patisserie.

Ingredients (serves 6 people)

  • Ingredients for the sponge
    • 115g unsalted butter, softened
    • 115g caster sugar
    • 4 large free-range eggs
    • 180g ground almonds
    • 30g poppy seeds
    • 2 lemons, zest and juice
    • 125g self-raising flour, sifted
  • Ingredients for the lemon drizzle
    •75-100g caster sugar
    •90 g lemon juice
  • Ingredients for the lemon icing
    • 225g icing sugar
    • 1 lemon, zest and juice

  1. Preheat the oven to 180°C.

  2. Using an electric whisk, beat the butter with the caster sugar until light and creamy.

  3. Add the eggs one by one, beating each one well.
    Fold in the ground almonds, poppy seeds, lemon zest, lemon juice and sifted flour.

  4. Grease a 20cm springform cake tin with a little butter or margarine. If you have a rigid cake tin, put a circle of greaseproof paper in the bottom then grease the bottom and walls of the tin.

  5. Spoon the mix into the prepared cake tin and bake in a preheated oven for 40 minutes or until lightly golden.

  6. Check your cake is cooked by carefully sticking a knife or skewer into the middle. If it comes out clean with no cake mix on it, your bake is done. If there is any mix on the knife, leave it in the oven for a few more minutes and check again.

  7. Make your lemon syrup by gently heating the sugar and lemon juice in a pan until the sugar has dissolved. While your cake is still warm, make lots of little holes in the top with a cocktail stick or fork and pour the syrup over the cake. Make sure the syrup is seeping into the cake not just running off the sides.

  8. Leave to cool.

  9. Whisk the icing sugar together with the lemon zest and juice and cover the top of the cake using a small spoon.
