Chicken pasta supper

Chicken is a meat that usually pleases everyone, plus it’s a great source of low-fat protein and full of other nutrients too.

Ingredients (serves 4 people)

  • 500g chicken breast
  • onion
  • garlic
  • chicken stock
  • tomato puree
  • 400g penne pasta.

  1. Chop 500g chicken breast into small pieces.

  2. Finely chop one onion and a clove of garlic.

  3. Lightly sauté the chicken, onion and garlic in a frying pan for a few minutes.

  4. Mix up ¾ litre boiling water with a cube of chicken stock.

  5. Stir one tablespoon plain flour and one dessertspoon tomato puree into the stock.

  6. Pour this over the chicken and leave it to simmer for 45 minutes.

  7. Boil 400g penne pasta for 10 minutes or so (according to the packaging instructions).

  8. Transfer the cooked penne then the chicken to a casserole dish and pour the stock mixture over the top.

  9. Bake for about 10 more minutes on gas mark 7 (220°C 0r 425°F).
