Mediterranean party food recipes - Roast red peppers with quinoa recipe

In the mood for entertaining? Add a sophisticated twist to your summer party with this delicious quick and easy dish.


Ingredients (serves 4 people)

  • Large red peppers
  • Rosemary
  • Finely chopped garlic
  • Olive oil
  • Quinoa

Directions

  1. Halve large red peppers and de-seed, put in an ovenproof dish and scatter with rosemary and finely chopped garlic.


  2. Sprinkle over olive oil and seasoning to taste. Roast at 160°C (gas mark 3) for 40 minutes. (If you want, add anchovies or feta cheese and put this back in the oven for a further 20 minutes.)


  3. Present these warm or cool on a bed of quinoa to soak up the juices.
