Nine minute soothing chicken noodles

This simple chicken noodle stir-fry is a real workday wonder that you can whip up in no time at all. Some green beans, broccoli or peppers make a nice addition if you have them.
Ingredients (serves 2 people)
- • 2 boneless chicken thighs, cut into pieces
- • 1 pack ready-to-wok noodles
- • 1 tbsp freshly grated ginger
- • 2tbsp dark soy sauce
- • 1 tbsp honey
- • Small bunch of coriander
- • 1 clove garlic, sliced
- • Vegetable oil for frying
- • 1 tbsp sesame oil
Heat the oil on a medium heat and fry the garlic and ginger for 1 minute. Add the finely chopped coriander stems, reserving the leaves for later.
Season the chicken with salt and pepper, add to the pan, then drop in the honey and soy sauce. Stir-fry until browned and cooked through (3 minutes or so).
Add the noodles and warm through for a minute.
Add the chopped coriander leaves, the sesame oil and more soy sauce if needed. Stir-fry for about another minute and serve sizzling hot.
