Quick recipe: Pancake Stack

Make smaller, slightly thicker pancakes and serve them American-style, with blueberries or strawberries, and maple syrup.


Ingredients (serves 6 people)

  • 400g self-raising flour
  • two teaspoons of baking powder
  • a pinch of salt
  • 600ml milk
  • 2 eggs
  • 40g butter

Directions

  1. Sift 400g self-raising flour into a bowl and stir in two teaspoons of baking powder and a pinch of salt. (You can add a tablespoon of caster sugar if you want them to be sweeter.)


  2. Measure 600ml milk and thoroughly stir in two eggs. (Try half buttermilk and half regular milk for a change.)


  3. Stream the milk and egg liquid into the dry ingredients then stir it until it is a smooth batter and leave to stand for about 20 minutes or so.


  4. When you are ready to cook, melt about 40g of butter and stir this in to the batter.


  5. Heat a little butter in a frying pan, then add a large tablespoonful of batter to create little pancake shapes. You can probably cook two or three at a time.


  6. Cook on a high heat for just two or three minutes on each side.


  7. Keep your pancakes warm until you have a whole stack ready to serve.
