Pea and broad bean soup, a tasty, easy dinner idea to suit what’s in season this spring.


Ingredients (serves 5 people)

  • 1 Onion
  • 2 cloves Garlic
  • Splash of Olive oil
  • Small handful of herbs of your choice
  • 1 Chilli
  • 1-2 Potatoes
  • 250g Peas
  • 250g Broad beans
  • 1 Courgette
  • 2 sticks of Celery
  • 1 Litre Stock

Directions

  1. Sauté onion and garlic with olive oil, adding herbs and finely chopped chilli to taste.


  2. Add potato cut into small cubes and fry the mixture until it all starts to soften.


  3. Add fresh peas and broad beans and other green vegetables as preferred (courgettes, celery etc).


  4. Cover all the ingredients with vegetable or chicken stock and simmer until it breaks down but isn’t completely mushy.
