Picnic feasts on a budget - Salmon tart

Picnics are a great idea for sunny days; turn a trip to the park into a special family day out by serving an outdoor lunch with this low-cost picnic food idea.


Ingredients (serves 8 people)

  • 250g shortcrust pastry
  • Scottish salmon
  • Five beaten eggs
  • 125g sour cream
  • 125ml milk and seasoning.

Directions

  1. Make it the night before so it’s firm and easy to slice.


  2. Roll out 250g shortcrust pastry and cut to fit a 25cm overproof dish, chill in the fridge.


  3. Bake the base at 190°C (gas mark 5) then scatter in a pack of chopped Scottish salmon.


  4. Then pour over a whisked mixture of five beaten eggs, 125g sour cream, 125ml milk and seasoning.


  5. Bake at 180°C (gas mark 4) for 30-35 minutes.
