Pizza jacket potatoes

Combine two of your favourite family meals for a warming (and value for money) dinner everyone will love
Ingredients (serves 4 people)
- 4 large baking potatoes
- 150g mozzarella cheese, shredded
- 75g sliced pepperoni, cut into strips
- 398ml jar tomato pasta sauce
- 1tbsp (15ml) olive oil
- 1 small onion, finely chopped
- 1 clove garlic, minced
- 1 green pepper, finely chopped
- 105g sliced mushrooms
- 1tsp (5g) dried oregano
Wash the potatoes and pierce with a sharp knife in several places, all over.
Microwave the potatoes for 10-14 minutes on a high setting. (Jacket potatoes are cooked if they give slightly when squeezed.)
In a microwave-safe casserole dish, combine the garlic, pepper, mushrooms and seasoning.
Microwave this for 4-6 minutes, until the peppers are tender.
Stir in the pasta sauce and pepperoni strips.
Microwave for a further 3-5 minutes, until the sauce bubbles.
Cut the potatoes in half, lengthways, spoon on the hot sauce and sprinkle with the cheese.
Microwave for 45-60 seconds to melt the cheese.
TIP: If you don’t want to use a microwave, make the most of the oven baking time (a jacket potato takes 50-60 minutes at 230°C) by getting bathtime or laundry done while you’re waiting.
