Pizza jacket potatoes

Combine two of your favourite family meals for a warming (and value for money) dinner everyone will love

Ingredients (serves 4 people)

  • 4 large baking potatoes
  • 150g mozzarella cheese, shredded
  • 75g sliced pepperoni, cut into strips
  • 398ml jar tomato pasta sauce
  • 1tbsp (15ml) olive oil
  • 1 small onion, finely chopped
  • 1 clove garlic, minced
  • 1 green pepper, finely chopped
  • 105g sliced mushrooms
  • 1tsp (5g) dried oregano

  1. Wash the potatoes and pierce with a sharp knife in several places, all over.

  2. Microwave the potatoes for 10-14 minutes on a high setting. (Jacket potatoes are cooked if they give slightly when squeezed.)

  3. In a microwave-safe casserole dish, combine the garlic, pepper, mushrooms and seasoning.

  4. Microwave this for 4-6 minutes, until the peppers are tender.

  5. Stir in the pasta sauce and pepperoni strips.

  6. Microwave for a further 3-5 minutes, until the sauce bubbles.

  7. Cut the potatoes in half, lengthways, spoon on the hot sauce and sprinkle with the cheese.

  8. Microwave for 45-60 seconds to melt the cheese.

  9. TIP: If you don’t want to use a microwave, make the most of the oven baking time (a jacket potato takes 50-60 minutes at 230°C) by getting bathtime or laundry done while you’re waiting.
