Easy recipe: Potato Rosti

Great with a hearty brunch or as a supper with salad. Adding cooked pancetta or lardons is a flavoursome option.
Ingredients (serves 4 people)
- Six large potatoes
- pancetta or lardons
- 200g Gruyere or another strong cheese.
Boil four to six large potatoes (choose a type that doesn’t crumble too easily when boiled – Maris Piper or Desiree) for about 12 to 15 minutes.
Drain and cool once they are almost cooked through but not entirely soft.
Grate the potato and mix into finely chopped onion and the optional pancetta or lardons.
Add 200g grated Gruyere or another strong cheese, and finely chopped fresh herbs to taste.
Shape the mixture into chunky, small patties then fry these for a few minutes on each side.
Serve with salmon and cream cheese.
