Summer supper recipes (Savoury couscous)

Savory cous cous, an easy dishes for family eating when time is short and the weather’s hot.


Ingredients (serves 5 people)

  • 400ml vegetable or chicken stock
  • one tsp of olive oil
  • 250g couscous
  • strips of courgette
  • red pepper
  • cherry tomatoes
  • fresh herbs
  • chicken breast
  • halloumi.

Directions

  1. Pour 400ml vegetable or chicken stock and one tsp of olive oil over 250g couscous, stirring then leaving to stand, covered, for five minutes.


  2. Toss strips of courgette, red pepper and cherry tomatoes in oil and fresh herbs.


  3. Bake for 20 minutes at gas mark 6 (200°C or 400°F).


  4. Grill strips of chicken breast or halloumi then pile these and the veg over the couscous.
