Recipes to make for a summer of sport: Baked chicken nuggets

This homemade fast food takes no longer than you running out to the high street for your takeaway and is healthier too

Ingredients (serves 5 people)

  • 6 boned, skinned chicken breasts
  • 100g breadcrumbs
  • 2 eggs
  • 100ml water
  • Optionally add 1/2 tsp garlic or bouillon powder

  1. The good thing about making your own chicken nuggets is you know exactly what’s going into them. Feel free to experiment with favourite dried herbs for your own unique special recipe coating.

  2. Cut six boned, skinned chicken breasts into nugget sizes, By nugget sized, we’re talking around 10cm long by 5cm wide.

  3. Mix 100g breadcrumbs with seasoning according to taste, e.g. ½ tsp garlic or Bouillon powder, your favourite herbs, whatever you fancy… and put into a large plastic bag.

  4. Mix 2 egg whites with about 100ml water then dip each nugget in this mixture. Shake off any excess.

  5. Put each egg coated nugget into the bag of seasoning and give it a good shake so each is nicely coated, then place on a greased baking tray.

  6. Bake the nuggets for about 15 minutes in a preheated oven at gas mark 6 (200ºC or 400ºF), turning to ensure they are golden brown and cooked through.

  7. Check your nuggets are fully cooked by inserting a skewer. When you take them out, if there are no pink juices, your nuggets are ready.

when i watched tv and seen what they put in some chicken nuggets and dippers i will be making my own from now and be using this recipe great thanks
