Seasonal recipes for spring - Warm salad supper

Warm salad supper, a tasty, easy dinner idea to suit what’s in season this spring.

Ingredients (serves 5 people)

  • Asparagus spears
  • Spring onions
  • Other vegetables as preferred (mushrooms, peppers, etc),
  • Herbs
  • Fresh ginger
  • Lemon juice
  • Serve with fresh salad.

  1. Wash and cut off the woody part of the stem from asparagus spears.

  2. Cut spring onions into thin strips, slice other vegetables as preferred (mushrooms, peppers, etc).

  3. Stir-fry or lightly sauté these ingredients with herbs, finely chopped fresh ginger or a couple of squeezes of fresh lemon juice.

  4. Prepare each plate with a bed of fresh salad and top with a spoonful of the vegetables

  5. then enjoy this fresh food feast!

  6. OPTIONAL: Add crumbled feta cheese pieces or grilled chicken strips.

My husband cooked us a warm salad of blue cheese, sliced pears, bacon cut into small pieces and cooked, all served over rocket or spinach leaves. Look at the BBC website for recipes.

Asparagus is one of those no no foods for me, so I have substituted it for corgettes, cut into strips and it was very nice indeed! A good quick supper recipe, all healthy.
