10-Minute Vegetarian Couscous
Serves 4
Prep time: 5 minutes
Cook time: 5 minutes
Ingredients
1 cup water
1 cup couscous
1/2 bunch radishes, thinly sliced
1/2 red onion, thinly sliced
1/4 cup fresh mint leaves, chopped
2 tablespoons olive oil
2 tablespoons balsamic vinegar
1/4 cup feta cheese, crumbled
Sea salt, to taste
Instructions
- In a medium saucepan, bring water to a boil. Remove from heat, add couscous, stir, then cover and let cook for 5 minutes. Fluff couscous with a fork.
- Add radish, red onion, mint, salt, olive oil and balsamic vinegar, then toss to combine.
- Just before serving, fold in feta cheese.
- This Moroccan couscous recipe is perfect eaten on its own or with a delicious tagine.
